Hot and Sour Shrimp Soup Recipe

Yield: 6 servings

  • 1 lb Medium shrimp
  • 3 tb Fresh lime juice or to taste  -(nam prik pow) OR see NOTE
  • 2 Sticks fresh lemongrass; OR
  • 2 tb -Dried lemongrass
  • 1 ts Thai chili paste
  • 4 Kaffir lime leaves – (fresh or dried)
  • 15 oz Canned straw mushrooms; -OR-
  • -OR- 12 md -Fresh mushrooms
  • 1 tb -Finely grated lemon zest
  • 3 Fresh hot green chilies
  • 1 1/2 qt Chicken stock
  • 3 tb Cilantro
  • 1 tb Fish sauce or salt to taste

NOTE: The pursuing mixture may be substituted with regard to 1 teaspoon Thai soup
paste: 1/4 ts cayenne, 1/4 tsp sugar and 1/2 tsp oil
Wash, peel from the lemon, de-vein shrimp. Save shells. Clean shrimp again, drain, terry
dry, cover and refrigerate. If using refreshing lemongrass, cut each stick into
a few 2 ” pieces–starting through rounded underside end. Throw out straw-like
