Aubergine with Lentils – Phad Makhua Sai Thua Khiew

Phad Makhua Sai Thua Khiew

1 Fresh chili
1/4 lb Lentils
2 tb Vegetable oil
1/2 ts Salt
1 tb Fish sauce
8 oz Aubergine (eggplant)
4 tb Water
4 Cloves garlic
10 Mint leaves

Cover the lentils using boiling normal water and leave for just two hours. Drain, cover
using fresh normal water, add salt, bring for the boil as well as cook, coated for 1/2
time. Drain.
Cut the actual aubergines lengthwise into 4 pieces after which it cut these quarters
into 5-cm (2-inch) parts.
Pound the actual garlic as well as chili in concert. Then fry them in the vegetable fat
until older.
Add the actual lentils, fish sauce, aubergine parts and water for the garlic as well as
chili in the pan. Continue baking for 2-3 minutes prior to the aubergine will be
cooked.
Increase the mint results in, turn the actual mixture just the once with a new spoon, as well as remove
from the heat.
